Pork Belly Burnt Ends

A lot have tried Brisket Burnt Ends. This pork Belly version is just as good, easy to make and full of flavour. These where cooked in the smoker but can easily be done in the oven.

 

 

 

 

 

 

Ingredients

 

  • 1 slab of pork belly skin removed

  • Cajun spice mix

  • Half a cup of dark brown sugar

  • Quarter a cup of honey

  • 100g of butter

For the Glaze

  • Half a cup of apple juice

  • Half a cup of apple sauce

  • Half a cup of BBQ Sauce

  • 1 tablespoon of chilli sauce

Instructions

 

  1. If not already skinned take the skin of the pork belly

  2. Slice the belly into 1.5 inch cubes

  3. Add the cajun mix, make sure all the sides of the pork belly is covered.

  4. Either put into the smoker or oven, temperature 120C

  5. Leave to cook for 2 hours.

  6. Take out of the smoker/oven

  7. Sprinkle the brown sugar and honey over the pork cubes

  8. Cut the butter in to several pieces, add it to the pork.

  9. Cover in kitchen foil.

  10. Put back into the smoker/oven for 2.5 hours

  11. Make the glaze by mixing all the ingredients together.

  12. After the 2.5 hours take out of the oven pour away all the juices, add the glaze give a bit of a mix. Put back in the smoker/oven for 15 minutes

  13. Serve immediately, try them in floured tortillas, with guacamole and salsa.
