The ultimate loaded nachos, piled high feeds 4. I some times do smaller versions, for when I watch the football, ideal for European nights, either on your own or to share with friends. For my version I use a terracotta cazuela 25Cm diameter, easily feed 4.
300g beef mince
one pack of El paso taco mix
Half a tin of El paso refried beans
A bag of corn nachos
150g shredded cheese, I use Mozarella
Half a red pepper diced
Half a green pepper diced
6 spring onions chopped
10 cherry tomatoes quartered
half a red onion diced
bunch of coriander chopped
El paso sliced jalapenos
Toppings of sour cream, guacamole, jar of salsa.
Fry the mince until browned, add half the diced red onion, then mix in the taco seasoning, mix well. Add 150ml water, then fry until the water has evaporated.
Heat half a tin of refried beans in the microwave, around 30/40 seconds.
You are now ready to build your nachos.
Using a oven prove bowl, preferably something with sides, I use a Cazuela.
Lay a layer of nachos, add half the refried beans, half the mince mix, enough shredded cheese to cover the mince, add half the red and green peppers, and cherry tomatoes.
Put in a preheated oven at 200c for 8/10 minutes or until the cheese has melted. Then take out of the oven.
Add another layer exactly the same order as the first layer.
