Cup final day, shall it be pizza, tacos, or quesadillas. I want all three, so here we have a quesadilla taco pizza all in one, just add margaritas, and some Mexican beer. Corn tortillas can be used for a gluten free option.
8 inch Old El Paso flour tortillas
300g of beef mince
A handfull of sliced spring onions
Cherry tomatoes chopped
Half a red and green pepper chopped
Bunch of coriander chopped
1 onion finely chopped
2tbs of chopped Old El Paso jalapenos
Old El Paso refried beans
Old El Paso salsa
Old El Paso taco mix
100g Grated cheddar cheese
100g Grated mozzarella cheese
Enough to make 3 to 4 pizza
Preheat oven to 230c
Fry the onions in a wok until soft.
Add the beef mince fry until browned
Drain of the fat add the taco seasoning mix.
Add 150ml of water to the mince fry for about 5 minutes, until most of the liquid has gone. Set to one side.
Start building the pizza.
Put one tortilla onto a baking sheet, spread over cheddar cheese.
Spoon over some of the beef mince mix, enough to cover the cheese, add two table spoons of salsa, spread over the meat.
Take another tortilla spread warmed refried beans over it, place on top of the first tortilla with the refried beans face down on the mince mix.
Now that the tortillas are stacked, spread enough salsa to cover it.
Add the mozzarella to the pizza spread out evenly.
Sprinkle on the cherry tomatoes, the red and green peppers, and the spring onions, plus the jalapenos if useing them.
Put in the oven for 8/10 minutes keep an eye on it, don't let it burn
When its done take out of the oven and sprinkle on the chopped coriander
Slice into 4 with a pizza cutter.
